Peas are vegetables that keep well; canned or frozen, they are available all year round, but neither of these preservation methods can preserve the fresh taste of peas intact! They should be enjoyed as soon as they arrive at our markets. The pods should be smooth and bright green. Once freshly shelled, you can cook them in water or butter. Peas pair very well with other vegetables in a vegetable stir-fry or a macédoine.
